Quick, easy salmon preparation. The recipe is called for two servings.

Ingredients
- 2 Salmon fillets (5-6oz each)
- 1 tbsp unsalted butter
- 3/4 tsp lemon juice
- 1-2 garlic cloves, minced
- kosher salt and pepper to taste
- 1/2 tsp finely chopped parsley (optional)
- 1/2 tsp finely chopped dill (optional)
- 6oz salad mix
- 1.25 oz mango vinaigrette dressing
Steps
- Pre heat oven to 375°f while the salmon fillets rest at room temperature for 15 minutes.
- Combine melted butter, garlic, and lemon juice in a small dish. Brush the salmon on all sides with the butter mixture, before placing in a baking dish. Pour raising butter mixer evenly over the fillets.
- Season salmon fillets with salt and pepper, then bake for 15-18 minutes.
- In small bowls, toss equal portions salad and dressing, then top with salmon filets and enjoy!
