Turkey and Rice Bowl or Street Tacos

It'd been a while since I've done any cooking for myself, which is not great since I do enjoy cooking. Monday night I whipped up a quick and dirty rice bowl topped with browned ground turkey cooked with soy and some other Stuff(tm).  It turned out pretty fantastic.


As presented, this recipe is scaled for a single serving which I scaled up for two servings so that I've some leftovers for the following day.  Since it was TacoTuesday I skipped the rice and instead served the ground and onion mix on Mission Sweet Hawaiian street taco tortillas garnished with some green onion and a few drops of sriracha sauce. (~460Kcal)


IMO, this worked WAY better as street tacos than as a rice bowl.

Ingredients

  • 6 oz ground turkey
    • Or beef or pork or chicken
  • 2 oz diced onions
  • 1 tbsp sake
  • 1 tbsp mirin
  • 1/2 tbsp soy sauce
  • 1/2 tbsp oyster sauce
  • 1/2 tbsp sesame oil
  • 1/2 tbsp potato starch
    • In a pinch, corn starch should also work
  • 1 pinch ground pepper
  • 7 oz cooked rice
    • Or 2 street taco tortillas if that's what twists your nipples.

Preparation

  1. Combine potato starch with water, and set aside. Dice the onion.
  2. In a pan over medium heat, add sesame oil and ground pork. Brown the pork slightly, then add the onions
  3. When the onions have softened, add sake, mirin, soy sauce, oyster sauce, and ground pepper
  4. When the pork is cooked through, add the potato starch and cook until thickened.
  5. Serve over 7oz of rice, optionally garnish with green onion.
