Turkey and Rice Bowl or Street Tacos

It'd been a while since I've done any cooking for myself, which is not great since I do enjoy cooking. Monday night I whipped up a quick and dirty rice bowl topped with browned ground turkey cooked with soy and some other Stuff(tm).  It turned out pretty fantastic.

As presented, this recipe is scaled for a single serving which I scaled up for two servings so that I've some leftovers for the following day.  Since it was TacoTuesday I skipped the rice and instead served the ground and onion mix on Mission Sweet Hawaiian street taco tortillas garnished with some green onion and a few drops of sriracha sauce. (~460Kcal)

IMO, this worked WAY better as street tacos than as a rice bowl.

Chicken with Rotini, Sun Dried Tomatoes, and Bell Peppers (Instapot Version)

Quick to prepare meal that makes use of an Instant Pot pressure cooker. You could make this without the pressure cooker, tho, by baking the chicken in an oven and preparing the pasta on the stove. These instructions do not cover that preparation method.

Easy Tonkatsu

I found myself jonesing for some tonkatsu and rice for dinner.  I made that happen. It's surprisingly easy and inexpensive to make.

This recipe only covers making the tonkatsu, not the rice.

New Rice Cooker

Recently kicked my old, simple mini rice cooker to the curb in favor a Panda mini rice cooker from Yum Asia. Used it for the first time last night, the result was better than I've ever managed with the old cooker by a lot. Most importantly no scorching and clean up was a a breeze.  I'm looking forward to making more rice.

Very much worth the money.

Low-Fi French Toast

It'd been a while since I've had French Toast.  I thought it would make for a quick, easy scaled-for-one breakfast. 3-ish minutes prep. 10-ish minutes cooking. 3-ish minutes cleanup.

It was pretty alright.

Angle Hair Pasta with red pepper and Garlic Butter Pan Sauce

Quick and easy pasta preparation for one or two, depending on how hungry you are. No real pasta sauce necessary, kind of a Japanese vibe to it.

Turkey Cheese Burger

Fun thing to make. Turkey burger with cheese in the middle. Super simple, three ingredients. Quick to make. This recipe makes one burger, scale it up if you want more.

Ham Cup Egg Bites

I really like egg bites as a breakfast food. I’ve made renditions of them several times with good success. This is my most recent attempt using smoked, uncured smoked ham as a cup for the eggs, cheese, and veggies.

These freeze well, reheat well, are relatively low calorie, and are relatively low sodium.

Oyakodon Like Thing

I've been diving into relatively quick and easy Japanese style dishes lately. Some as comfort food, some because they're easy to scale for a single person.  And I do love me some rice bowls. This is pretty quick and easy but to make but it's also A LOT for one person.  Maybe scale it back a little if you don't want to power down on 1,200+ K/Cal in one sitting.

Chicken Thigh, Tomatoes, and Olives

Quick and easy sauté chicken dish. Minimal prep time, minimal cook time.
